做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油(yóu ),放(fàng )入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
