做(zuò )法:春笋切成(chéng )片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧(shāo )热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
