做法:春笋切成片后加少许盐捞出(chū )后用清(qīng )水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅(guō )烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
