做(zuò )法:春笋(sǔn )切成(chéng )片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
