做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍(shāo )收(shōu )汁时(shí )盖上锅盖焖。
