做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
