做(zuò )法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
