做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱(cōng )切成段(duàn )。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火(huǒ )。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖(mèn )。
