做法(fǎ ):春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干(gàn )的时候加(jiā )入盐(yán ),翻炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
