做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住(zhù )春笋,盖(gài )上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
