做法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大(dà )火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时(shí )盖(gài )上锅盖焖(mèn )。
