做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入2勺油,放(fàng )入生姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
