做法:春(chūn )笋(sǔn )切成片(piàn )后加少许盐捞出后用清(qīng )水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的(de )时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
