做(zuò )法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分(fèn )钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收(shōu )汁时(shí )盖上(shàng )锅(guō )盖焖。
