做法:春(chūn )笋切成片后(hòu )加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅(guō )烧(shāo )热,倒(dǎo )入(rù )2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
