做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大(dà )火煮开后转(zhuǎn )中火(huǒ )。煮(zhǔ )到(dào )水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
