做法:春笋(sǔn )切成片后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖(gài )焖(mèn )。
