做法:春笋切(qiē )成片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
