做(zuò )法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再(zài )加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
