做法:春笋切成片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再(zài )加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖上锅(guō )盖(gài )焖。
