做法(fǎ ):春笋切成片后加少许(xǔ )盐捞(lāo )出后用清(qīng )水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁(zhī )时(shí )盖上锅(guō )盖焖。
