做(zuò )法:春笋切成片后加(jiā )少许(xǔ )盐捞出后(hòu )用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入(rù )生抽(chōu )、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开(kāi )后(hòu )转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
